Sourdough Bread 3 cup whole wheat or all purpose flour 1 cup sourdough started 2 cup warm water 2 tbsp. sugar 1 tbsp. salt 1 tsp. baking soda 3 1/2 cup enriched unbleached flour Mix and beat till smooth. Cover with wax paper and let stand in warm place for 18 hours. Stir down and stir in remaining flour to make a moderately stiff dough. Knead 8 to 10 min. Make two loafs about 12" long. Place on greased cooking sheets sprinkled with cornmeal. Brush loafs with butter. Cover and let rise in warm place about 1 1/2 hours. Bake 400F for 40 to 50 min. Brush tops with melted butter.
