Cinnamon Rolls 1/4 cup warm water 1 pkg. active dry yeast 3/4 cup lukewarm milk 1/4 cup sugar 1 tsp. salt 1 egg 1/4 cup soft shortening 3 1/2 to 4 cups flour In mixing bowl, dissolve yeast in warm water. Add milk, sugar, salt, egg, shortening, and half of the flour. Mix with a spoon until smooth. Add enough remaining flour to allow easy handling; mix by hand. Turn onto lightly floured board; knead until smooth and elastic(about five min.). Round up on greased bowl, bring greased side up; cover with damp cloth. Let rise in warm place(85 F.) until double(about 1 1/2 hour). Punch down; let rise again until double, about thirty min. Roll dough into oblong, 15"x9". Spread with 2 tbsp. soft butter and sprinkle with 1/2 cup sugar and 2 tsp. cinnamon, pour a little syrup over. Roll up tightly, beginning at wide side. Seal well by pinching the edges of the roll together. Even up roll by streching slightly. Cut roll into 1" slices. Place in greased 13"x19" pan or 18 greased muffin cups. Cover and let rise until double, 35 to 40 min. Bake at 375F for 45 min. OPTIONAL-- May pour a mixture of half cream or milk and syrup plus a dash of butter. Warm to touch and pour over uncooked rolls.
